The National Active and Retired Federal Employees Association (NARFE) Chapter 0730 meeting is Thursday, Sept. 8, at 11 a.m. in the Shoney’s Restaurant, 619 E. Main St. (across the street from the Walmart) in Henryetta. This month’s program is Beef Carcass USDA Beef Cattle Quality and Yield Grading Standards. There are eight USDA quality grades and vve yield grades. Quality grades reflect the expected palatability of cooked beef cuts (for example, tenderness, juiciness and flavor), yield grades identify carcasses for the percentage of yield of boneless, closely trimmed retail cuts from the round, loin, rib and chuck.
